今年適逢大閘蟹豐收,又遇上大陸打貪,以往用來送禮的靚蟹滯銷,益了一眾香港大閘蟹迷。大批大隻爆膏大閘蟹到港,價格比往年平近兩成,現在不吃還待何時?

蟹公蟹乸各有妙處

「九月圓臍十月尖,持螯飲酒菊花天」,蟹迷人人懂背誦,但你又知不知為何農曆九月吃蟹乸,農曆十月吃蟹公?其實這兩個月份是大閘蟹交配時期,雌雄蟹都會分泌大量蟹黃/膏作為繁殖後代的養分,所以蟹黃/膏特別豐富。九月先吃蟹乸,因蟹乸較蟹公早熟,農曆九月蟹乸已經多軟身蟹黃,到農曆十月蟹黃變硬就失去滋味;農曆十月蟹公生長成熟,蟹膏外更有行內稱為「白油/白膏」(即蟹的精子),蟹膏與「白油」混和同吃,黏口味香濃。
