"greed" refers to  the behavior, "greediness" refers to  state or quality (character) of being greedy.   Hence, in your questioned sentence, you can replace it with "greediness".   However, the meaning is a little different.  

Using "human greed" refers to the human's greedy behavior.

Using "human greediness" refers to the human's character or nature of being greedy.
